super simple single serving sweet snack

I've seen many variations of this CupCake floating around the blogosphere.
Some include eggs, mine does not, and it still comes out deeeelicious!
In a microwavable mug:
1/4 cup flour (Bob's Red Mill gluten free all purpose for me)
1 scoop chocolate rice protein powder
1 tablespoon unsweetened cocoa powder
1/2 tablespoon baking powder
1 tablespoon cinnamon
stevia (or sugar) to taste
Next I added 1/3 cup coconut milk and mixed
Into the microwave for 1 minute 30 seconds
So yum!
There are so many variations on this, you can be totally creative
You could add:
egg if you are not intolerant
 flaxmeal (which I would have, if there was some here!)
 chocolate chips
 peanut butter
mashed banana
vanilla extract
You can also top it with:
 melted peanut butter
frosting
powdered sugar
agave
honey
Totally hits the spot when you want a fast and easy chocolately treat :)

  7. Yum Heather. Love the addition of coconut milk. I'm thinking of trying it with avocado myself for a good dose of fat. :)
